Instructions
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In another bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are perfectly fine.
- Let the batter rest for 5 minutes for extra fluffy pancakes.
- Heat a lightly greased skillet or griddle over medium heat.
- Pour about 1/4 cup batter for each pancake onto the hot skillet.
- Cook until bubbles form on the surface and the edges begin to look set, about 2–3 minutes.
- Flip and cook another 1–2 minutes until golden brown and cooked through.
- Serve warm with butter, maple syrup, fresh berries, or whipped cream.
