3 medium potatoes, diced small

1 tbsp olive oil or butter

4 large eggs

½ cup shredded cheddar cheese (or your favorite)

½ small onion, diced

1 small bell pepper, diced (optional)

2 tbsp fresh parsley or chives for garnish

Cook potatoes

Heat oil or butter in skillet over medium heat.

Add diced potatoes, onion, and bell pepper.

Season with salt & pepper and cook 10–12 minutes until potatoes are tender and lightly golden, stirring occasionally.

Add eggs
-
Make 4 small wells in the potatoes and crack one egg into each.

Cover skillet and cook 5–7 minutes until eggs reach desired doneness.

Add cheese

Sprinkle shredded cheese over potatoes and eggs.

Cover again for 1–2 minutes until cheese melts.
